The best estates are working farms that happen to have beautiful rooms.
There is a particular kind of luxury in staying somewhere that would exist anyway. The vines were planted before the hotel. The cellar was dug for wine, not for tastings. The kitchen cooks what the estate grows because that is what there is.
This chapter gathers houses where hospitality is a consequence of agriculture rather than a substitute for it. Expect early mist in the valley, long lunches, and the sound of tractors somewhere below the terrace.
